Hitman is as bloody as you make it. You can beat most of the newer Hitman games without seeing any blood, if you do it right.

I just beat Blood Money twice: On easy and normal.

Seriously guys, go buy the game, it's better than the last 3, which means it's totally fuckin' fantastic.
