1 1/2 cups yellow corn meal
1 1/2 cups flour
4 teaspoons baking powder
1 teaspoon salt
3 tablespoons sugar
1/4 cup shortening
2 tablespoons butter
3 eggs, separated
1 3/4 cups milk
Preparation:
Sift dry ingredients. In a medium bowl, beat egg yolks; add milk and melted shortening. Combine sifted dry ingredients with the egg yolk mixture. Beat egg whites; fold into the mixture. Pour into a buttered 6 x 9 1/2 x 2-inch pan and bake in a 400° oven for about 20 minutes.

SPICY CORN BREAD MUFFINS

1 1/2 c. yellow whole grain cornmeal
1 tsp. baking soda
1 tsp. sugar
1/2 tsp. salt
2 egg whites or 1 egg
1/4 c. picante sauce
1/4 c. vegetable oil
1 (8 oz.) carton plain non-fat yogurt
Vegetable cooking spray

In mixing bowl, whisk egg whites lightly. Add picante sauce, oil and buttermilk; mix well. Add dry ingredients and mix until moistened. Spoon into muffin pans coated with non-stick spray, filling 2/3 full. Bake at 425 degrees for 18-20 minutes. Yield: 1 dozen.
